Why these, and why Australian units
Almost every conversion tool online is American. It thinks a cup is 240 ml, a tablespoon is 15 ml, an oven is set in Fahrenheit and nobody owns a fan-forced oven. Australian recipes, ovens and measuring spoons disagree on all four counts, which is why a straight copy of an overseas chart quietly ruins a sponge. Every figure here follows the conventions the Australian test kitchens write to.
